YOU WILL NEED
pansies, violets or primroses - choose clean, young flowers that are whole scissors
1 egg white
small paintbrush
caster sugar
fine sieve
wire cooling rack
airtight container
How to make crystallized icing flowers
1 Trim the stem of each flower to 1cm.
2 Whisk the egg white in a bowl until light and fluffy, then, using a small paintbrush, coat one of your (lowers with a very fine layer of the mixture. Before it dries, sprinkle over a little caster sugar with a tine sieve.
3 Tap excess sugar from the petals and place the flower onto a wire rack. Repeat with your other blooms, then leave in a warm, dry place to set - this may Take up to 24 hours.
4 When they are completely dry. store in an airtight container for up to a week.
